Ingredients
1 tbsp salt
200ml warm water
Pre-cooked and cooled filling of your choice
2 tbsp oil or melted lard
1 tbsp white vinegar
500g all-purpose flour
200ml warm water
Pre-cooked and cooled filling of your choice
2 tbsp oil or melted lard
1 tbsp white vinegar
500g all-purpose flour
Where to find ingredients
All ingredients can be found in standard supermarkets. Lard is available in the butchery section or specialized food stores. If white vinegar is unavailable, apple cider vinegar can be used as a substitute for the acidity, though white vinegar is the standard.
Preparation method
- In a large bowl, mix the all-purpose flour with the salt.
- Make a well in the center of the dry ingredients and add the oil (or lard) and the white vinegar.
- Pour in the warm water gradually while incorporating the ingredients with your hands, until the dough begins to come away from your fingers.
- Transfer the dough to a smooth surface and knead vigorously until it achieves a soft and homogeneous texture.
- If necessary, adjust the consistency by adding a few drops of water if it is too stiff, or by sprinkling flour if it is sticking.
- Cover the dough with a clean cloth and let it rest for 20 minutes.
- Roll out the dough using a rolling pin until it is very thin.
- Cut the dough into your desired shape and size.
- Place a portion of your preferred filling in the center of the dough and close it, pressing down firmly on the edges to seal.
- Deep-fry the pastries in hot oil until they turn golden brown.
- Drain the excess oil on paper towels and serve immediately.
Observations
This pastry dough is a classic of Brazilian cuisine, highly prized for its crispy texture and the ease of preparation at home. The secret to a professional result is to knead the dough thoroughly until it is smooth and to roll it out with a rolling pin until it reaches a very thin thickness. This method ensures golden-brown pastries without excess oil when frying.
