Cauliflower Gratin (Couve-flor gratinada)

Ingredients

1 medium cauliflower
2 1/2 cups milk
2 level tablespoons wheat flour
3 egg yolks
1 tablespoon butter
4 tablespoons grated Parmesan cheese
1 tablespoon breadcrumbs
Salt to taste

Where to find ingredients

Look for cauliflower in the fresh produce section of supermarkets, open-air markets, or neighbourhood grocery stores. Use regular flour, milk, butter, Parmesan, and breadcrumbs from the baking and dairy aisles; if needed, a plain hard grating cheese can be used as a substitute for Parmesan.

Preparation method

  1. Cook the cauliflower in salted water, without letting it become too soft
  2. In a bowl, mix the milk, wheat flour and the sieved egg yolks
  3. Season with salt and cook over medium heat, stirring constantly until thickened
  4. Remove the cream from the heat and stir in the butter and 3 tablespoons of grated Parmesan cheese
  5. Mix well and set aside
  6. Arrange the cooked cauliflower in a butter-greased baking dish
  7. Cover the cauliflower with the prepared cream
  8. Sprinkle with the remaining grated Parmesan cheese and the breadcrumbs
  9. Bake in a preheated high oven until gratinated
  10. Serve directly from the baking dish
