Ingredients
100g sugar
2 tbsp chopped cashews
2 medium papayas, fresh pulp
250ml heavy whipping cream
2 tbsp chopped cashews
2 medium papayas, fresh pulp
250ml heavy whipping cream
Where to find ingredients
You can find fresh, ripe papayas at local fruit stalls and supermarkets across Namibia; choose the ones with fragrant, slightly soft skin. Cashews are widely available in the snack or baking aisles of major retailers like Checkers or Pick n Pay. Look for high-quality heavy whipping cream in the dairy refrigerated section. If you can't find cashews, blanched peanuts are a common, though less buttery, crunchy substitute.
Preparation method
- Halve the papayas and scoop out all the seeds
- Scoop the pulp from one papaya and blend until you have a smooth purée
- Dice the pulp of the second papaya into small, bite-sized pieces and set aside
- Whisk the heavy cream and sugar in a mixing bowl until firm peaks form
- Gently fold the papaya purée into the whipped cream, being careful to keep the mixture light
- Carefully fold the diced papaya pieces into the cream mixture
- Pour the mixture into an ice tray or a suitable freezer-proof container and freeze for at least 4 hours
- To unmold, briefly run the bottom of the container under warm water
- Scoop or cut the sorvete into portions, serve in bowls, and garnish generously with chopped cashews
- For an extra kick of brightness, squeeze a few drops of lime juice over the top before serving
