White Beans with Turmeric

Ingredients

1 cup white beans
6 cups water (divided into two 3-cup portions for cooking)
2 cloves garlic
3 sprigs cilantro (leaves and stems)
1 tablespoon olive oil
1/2 teaspoon turmeric
1 bay leaf
Salt and freshly ground black pepper to taste

Preparation method

  1. Wash the beans in a colander under running water
  2. Place the beans in a bowl and cover with 3 cups of water
  3. Discard any beans that float to the surface
  4. Cover the bowl and let the beans soak for 12 hours
  5. Change the soaking water once during this period to aid digestion and speed up cooking
  6. Drain the beans and discard the soaking water
  7. Place the beans in a pressure cooker with the remaining 3 cups of water and the bay leaf
  8. Cover the pot and place over high heat
  9. When the pot reaches pressure, lower the heat and cook for 15 minutes
  10. Peel and finely chop the garlic while the beans cook
  11. Wash the cilantro, chop the stems, and reserve the leaves for the end
  12. Turn off the heat after the cooking time
  13. Wait for all the pressure to release naturally before opening the lid
  14. Remove the beans with a slotted spoon and reserve them in a bowl, saving the cooking broth
  15. Heat the olive oil in a medium skillet over medium heat
  16. Sauté the chopped garlic, cilantro stems, and turmeric for about 1 minute until fragrant
  17. Add the beans to the sauté, season with salt and pepper, and stir for 1 minute
  18. Add 1 cup of the cooking broth
  19. Cook for another 5 minutes, stirring occasionally until the broth thickens
  20. Finish by turning off the heat, mixing in the fresh cilantro leaves, and serving immediately
