Ingredients
400 g ground patinho (lean beef)
200 g green beans (approximately 20 units)
1/2 onion
1 garlic clove
2 tablespoons olive oil
1 tablespoon all-purpose flour
1 teaspoon sweet paprika
1/2 teaspoon cumin
1 cup water
Salt and freshly cracked black pepper to taste
200 g green beans (approximately 20 units)
1/2 onion
1 garlic clove
2 tablespoons olive oil
1 tablespoon all-purpose flour
1 teaspoon sweet paprika
1/2 teaspoon cumin
1 cup water
Salt and freshly cracked black pepper to taste
Where to find ingredients
You can find fresh produce like green beans and onions at local farmers' markets or supermarkets in Maseru. For the ground beef, look for a butcher counter in major retail stores; 'patinho' is a very lean cut, so if unavailable, request a lean ground beef substitute with low fat content.
Preparation method
- Take the beef out of the refrigerator shortly before starting to let it reach room temperature.
- Place the water in a small pot to heat over low heat.
- Wash the green beans thoroughly.
- Remove the ends and cut them into 1.5 cm pieces using a diagonal cut.
- Dice the onion into 1 cm cubes.
- Peel and finely mince the garlic.
- Heat a large skillet or frying pan over medium heat.
- Add 1 tablespoon of olive oil and spread the ground beef in small portions across the pan.
- Let the meat brown undisturbed for 1 minute.
- Season with salt and pepper, then sprinkle the flour over the meat.
- Cook for 5 minutes, stirring occasionally to break up the pieces and ensure even browning.
- Transfer the browned beef to a bowl and set aside.
- Keep the pan over the heat and add the remaining olive oil along with the onion.
- Add a pinch of salt and sauté the onion for 2 minutes until softened.
- Add the cut green beans to the pan.
- Season with salt and pepper, sautéing for 2 minutes until lightly browned, while maintaining their crisp texture.
- Add the garlic, paprika, and cumin.
- Sauté for another minute until the spices release their aroma.
- Pour in the hot water gradually while scraping the bottom of the pan with a spatula to deglaze.
- Return the browned ground beef to the pan.
- Cook for another 2 minutes until the sauce thickens.
- Serve immediately.
