Ingredients
1 kg sweet tapioca starch
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
Where to find ingredients
In Kiribati, sugar, margarine, eggs and grated coconut are usually found in general stores and supermarkets. Sweet tapioca starch may be in larger shops or imported-food sections; keep it as the ideal ingredient for the biscuit texture.
Preparation method
- Place the sweet tapioca starch, sugar, margarine, eggs and grated coconut in a large bowl
- Mix all the ingredients and knead with your hands until you have a smooth, even dough
- Grease a baking tray with a thin layer of fat
- Make small balls with portions of the dough
- Spread the balls over the baking tray, keeping a little space between them
- Place in a preheated oven at medium temperature
- Bake until the biscuits show a lightly golden colour
Observations
These sweet tapioca starch biscuits are simple, homemade and gently coconut-flavoured. The dough is kneaded by hand, shaped into small balls and baked until the biscuits take on a pale golden colour.
