Stuffed Beef Roll (Rocambole de carne)
A comforting Brazilian meat roll made with seasoned minced beef and a generous filling, suited to a family meal or shared table.

Ingredients
500 g minced beef
3 garlic cloves, chopped
1 onion, chopped
2 eggs, lightly beaten
50 g grated parmesan cheese
1/2 teacup wheat flour
Salt to taste
Oregano to taste
Parsley to taste
Pepper to taste
100 g sliced ham
100 g sliced mozzarella cheese
1 carrot, cut into rounds
2 boiled eggs
1 onion, sliced
1 teacup chopped olives

Where to find ingredients
In Kiribati, minced beef, eggs, onions, carrots and basic seasonings can usually be found through supermarkets, general stores, butchers or fresh produce sellers. Parmesan, mozzarella, ham and olives may be in larger shops or imported-food sections; use the original ingredients when available.
Preparation method
- Place the minced beef in a large bowl
- Add the chopped garlic and onion
- Mix in the lightly beaten eggs and grated parmesan cheese
- Season with salt, oregano, parsley and pepper
- Mix everything very well
- Add the wheat flour little by little and knead with your hands until you have an even mixture
- Open the meat mixture out on a sheet of aluminium foil lightly greased with oil
- Cover the opened meat with the slices of ham and mozzarella
- Spread the carrot, boiled eggs, olives and sliced onion over the top
- Roll the meat with the help of the aluminium foil, shaping it into a roulade
- Transfer the roll to a rectangular baking tray
- Bake in a preheated oven at 180°C for 25 minutes

This stuffed beef roll is a good choice for lunch or dinner. The preparation is simple, and the result is juicy, well-seasoned meat with cheese, ham, vegetables, olives and boiled eggs inside.
