Where to find ingredients
In Kenya, you can easily find these ingredients at local supermarkets like Naivas, Carrefour, or Quickmart. For the 'pão de forma', simply look for any standard sliced white bread found in the bread aisle. Mozzarella and ham are readily available in the deli or cold cuts section of most major supermarkets. If you prefer a more artisanal feel, local bakeries provide fresh bread, and any standard vegetable market (soko) will have fresh garlic, onions, and tomatoes.
Preparation method
- Sauté the garlic and onion in oil until they are soft and golden
- Toss in the diced tomatoes and season with salt
- Simmer until you have a nice, thick, and creamy sauce
- Take it off the heat and keep it aside
- Arrange the bread slices side-by-side on a baking tray
- Spread a generous spoonful of the prepared sauce over each slice of bread
- Layer the ham slices neatly on top of the sauce
- Cover everything well with slices of mozzarella cheese
- Finish with a sprinkle of dried oregano and a light drizzle of oil
- Pop the tray into a preheated oven
- Bake just until the cheese is melted and bubbling, then serve immediately
Observations
This recipe uses everyday white bread slices as the base, turning simple pantry ingredients into a quick and delicious take on pizza. Making a small, flavourful sauce brings the whole thing together for a really juicy bite.
