Where to find ingredients
Look for papaya, fresh cream, sugar, and cashew nuts at the fruit and dairy sections of supermarkets, or at local fruit vendors and grocery stores. If needed, substitute cashew nuts with chopped almonds, but keep papaya and cream as the core ingredients.
Preparation method
- Halve the papayas and remove all the seeds
- Scoop out the flesh from one papaya and process until you get a smooth purée
- Dice the flesh from the second papaya into small pieces and set aside
- Whip the cream with the sugar in a mixer until it forms a firm whipped cream
- Gently fold the papaya purée into the whipped cream, keeping the mixture light
- Add the diced papaya pieces and fold in gently
- Pour the cream into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmould, briefly run the bottom of the container under warm water
- Cut the ice cream into cubes, distribute into dessert cups, and finish by sprinkling the cashew nuts on top
- If you like, add a few drops of lime over the cups for a citrusy touch
