Easy Chicken à Parmegiana (Frango à parmegiana e)

Ingredients

300g chicken breast fillets
Lemon juice to taste
Black pepper to taste
120ml tomato sauce (passata)
4 slices mozzarella cheese
1 tsp dried oregano
2 tsp finely grated parmesan cheese

Where to find ingredients

You can find chicken breast fillets, fresh lemons, and mozzarella in the chilled meat or dairy aisles of major supermarkets like Waitrose, Sainsbury's, or Tesco. Dried oregano and parmesan are available in the dried herbs and world foods/pasta sections respectively. As a shortcut, a good quality jarred pasta sauce can be used if you don't have time to simmer your own tomato base.

Preparation method

  1. Season the chicken fillets with lemon juice and freshly cracked black pepper.
  2. Place each fillet between two sheets of cling film.
  3. Gently flatten the fillets using a meat mallet or rolling pin.
  4. Remove the cling film from the fillets.
  5. Arrange the fillets in a shallow baking dish.
  6. Bake in a preheated oven at 180°C for 20 minutes.
  7. Remove the dish from the oven.
  8. Spoon the tomato sauce evenly over each fillet.
  9. Cover the fillets with the slices of mozzarella cheese.
  10. Sprinkle the oregano and grated parmesan over the cheese layer.
  11. Return to the oven for 5 minutes, or until the cheese is bubbling and melted.
  12. Serve immediately.
