Easy Chicken Escondidinho (Escondidinho de frango e)

Ingredients

500g chicken breast, cubed
1kg potatoes
1 tbsp butter
2 tbsp olive oil
1 onion, finely chopped
6 tomatoes, chopped
1/2 green pepper, chopped
150g green olives, pitted and chopped
2 tbsp fresh coriander, chopped
1 sachet (approx. 60g) onion soup mix
800ml whole milk
3 cups cooked long-grain rice
Grated mozzarella cheese, to taste

Where to find ingredients

Find fresh produce and poultry in the fruit and vegetable or meat aisles of any local supermarket. Onion soup mix is commonly found in the soup or packet sauce section. Mozzarella can be purchased pre-grated or in blocks in the dairy aisle. If you cannot find fresh coriander, flat-leaf parsley is a suitable alternative for the topping.

Preparation method

  1. Peel and boil the potatoes until tender, then mash them with the butter until smooth and set aside.
  2. Heat the olive oil in a large pan over medium heat and sauté the chopped onion until translucent.
  3. Add the cubed chicken to the pan and sear until golden brown.
  4. Stir in the chopped tomatoes, green pepper, olives, and fresh coriander; cook for a few minutes until the vegetables soften.
  5. In a separate jug, whisk the onion soup mix into the milk until fully dissolved.
  6. Pour the milk and onion soup mixture over the chicken in the pan.
  7. Continue to cook, stirring constantly, until the sauce thickens to a creamy consistency.
  8. Grease a baking dish with a little butter to prepare for assembly.
  9. Spread the creamy chicken mixture evenly across the base of the dish.
  10. Add an even layer of the cooked rice over the chicken base.
  11. Cover the rice with a smooth, uniform layer of the mashed potatoes.
  12. Sprinkle a generous layer of grated mozzarella over the top.
  13. Bake in a preheated oven at 180°C for approximately 20 minutes, or until the cheese is melted and bubbling.
