1 garlic clove, crushed

Where to find ingredients
Prawns can be sourced from a local fishmonger or the fresh seafood counter at a supermarket. Requeijão cremoso is a distinctive Brazilian cream cheese spread; it can be found in the world food aisle of larger supermarkets or in specialist Latin American grocers. If unavailable, a thick, full-fat cream cheese acts as a suitable substitute.
Preparation method
- Season the prawns with salt and garlic, then set them aside.
- Heat a splash of olive oil in a pan and sauté the grated onion until translucent and softened.
- Add the seasoned prawns to the pan and cook for just a few minutes until they turn pink. Remove the prawns and transfer them to a baking dish.
- In the same pan, add a little extra olive oil if needed and stir in the requeijão cremoso until it begins to melt.
- Gently fold in the double cream, stirring continuously until the sauce is smooth and fully emulsified.
- Taste and adjust the seasoning with salt as required.
- Pour the hot, velvety sauce over the prawns in the baking dish.
- If using, sprinkle the grated Parmesan cheese evenly over the top.
- Place in a preheated oven at a high temperature and bake for 10–15 minutes, or until the top is beautifully golden and bubbling.
Observations
Creme de camarão is a beloved classic in Brazilian home cooking, celebrated for its silky, luxurious texture and rich, savoury profile. Whether you are hosting a formal dinner party or simply craving a comforting yet elegant main course, this dish balances the sweetness of fresh prawns with a deeply creamy sauce.
Despite its sophisticated presentation, the recipe is surprisingly straightforward to assemble. It is best enjoyed served hot, accompanied by simple steamed long-grain rice and a garnish of crispy shoestring potatoes to provide the perfect contrast in texture.
