Where to find ingredients
Digestive biscuits are widely available in most supermarkets and grocery stores here in Fiji. Margarine, milk, sugar, and canned evaporated milk can be found in the dairy and baking aisles of any local supermarket. Pumpkin is a common local vegetable, usually available at fresh produce sections in supermarkets or at local markets. Ricotta cheese and cream cheese are typically found in the chilled dairy section of larger supermarkets. Unflavoured gelatin powder is usually in the baking aisle, often with dessert mixes or baking supplies. If you can't find unflavoured gelatin, check the baking section of larger supermarkets or specialty baking stores.
Preparation method
- Preheat your oven to 200°C
- Crush the biscuits into fine crumbs
- Combine the biscuit crumbs with margarine and milk, mixing well until you have a moist, uniform mixture
- Press this mixture evenly onto the bottom and sides of a 25 cm pie dish
- Bake for 15 minutes, then let it cool completely
- Steam the pumpkin until very soft, then mash it with a fork while still hot
- In a blender, whiz together the ricotta, cream cheese, and sugar until smooth
- Prepare the gelatin according to package instructions
- Gently fold the mashed pumpkin, evaporated milk, the blended cream mixture, and the prepared gelatin into a bowl until well combined
- Pour this filling over the cooled base and chill until the pie is firm and ready to serve
