Classic Plantain Farofa (Farofa de banana-da-terra)

Ingredients

2 green plantains
2 cups yellow flaked corn flour
75g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

You can find plantains at local Fijian markets or the produce section of supermarkets. Yellow flaked corn flour is commonly found in the baking or international food aisles of major grocers. If corn flour is unavailable, coarse semolina or fine polenta can serve as a suitable substitute.

Preparation method

  1. Trim the ends of the plantains and peel them.
  2. Cut each plantain in half lengthwise.
  3. Cut each half again lengthwise.
  4. If the resulting strips are too thick, slice them into three segments.
  5. Dice each piece into approximately 1cm cubes.
  6. Heat a large non-stick skillet over medium heat.
  7. Add the vegetable oil to the skillet.
  8. Add the diced plantains to the pan and season with a pinch of salt.
  9. Sauté for about 6 minutes, stirring occasionally, until slightly caramelized. Note that cooking time may vary based on the ripeness of the plantains; riper ones brown faster.
  10. Reduce the heat to low.
  11. Add the cubed butter to the skillet and stir until completely melted.
  12. Season with 1 teaspoon of salt and black pepper to taste.
  13. Gradually add the corn flour, stirring continuously with a spatula to incorporate well.
  14. Cook for another 4 minutes, stirring constantly, until the farofa is crispy and golden brown.
  15. Remove from heat and serve the farofa immediately.
