Where to find ingredients
You can find these ingredients at most major supermarkets in Botswana. Look for arborio rice in the grains or international aisle, and purchase fresh or frozen shrimp at the seafood counter. Palmito (palm hearts) is often found in the canned vegetable section.
Preparation method
- Heat the oil in a large pan and sauté the onion until translucent.
- Stir in the garlic and cook for a further 30 seconds.
- Add the shrimp and cook until pink and firm, approximately 3 to 4 minutes.
- Remove the shrimp from the pan and set aside.
- In the same pan, add the rice and toast for 1 minute, stirring constantly.
- Add a ladle of warm stock or water and stir continuously until the liquid is almost fully absorbed.
- Repeat the process, adding liquid gradually, until the rice is al dente and creamy.
- During the final minutes of cooking, stir in the tomato, palm hearts, peas, and the reserved shrimp.
- Combine everything well, season with salt and pepper to taste, and finish with fresh parsley.
- Serve hot, garnished with extra parsley if desired.
