Brazilian Blender Savoury Chicken Pie
A quick and simple blender pie with a creamy, flavourful chicken filling. It's a real crowd-pleaser for a light lunch or a comforting weeknight meal.

Ingredients
1 cup of vegetable oil
1 can of tinned sweetcorn
2 cups of milk and 2 whole eggs
50g of grated parmesan cheese
1 tablespoon of baking powder
1 can of tinned peas
10 tablespoons of plain flour
salt to taste
2 beef stock cubes
2 tablespoons of vegetable oil for frying
500g of cooked and shredded chicken with chopped onion
2 cups of grated mozzarella cheese

Use any standard vegetable or sunflower oil from the baking aisle.
Preparation method
- Heat 2 tablespoons of oil in a frying pan and sauté the onion until it turns translucent and soft
- Add the shredded chicken, corn, and peas to the pan, season with salt to taste, mix everything well, and set it aside
- In a blender, combine the eggs, milk, oil, flour, grated Parmesan, and the stock cubes
- Blitz all the batter ingredients until you have a smooth, well-combined mixture
- Gently fold in the baking powder with a spoon or spatula until just incorporated
- Grease a medium-sized baking dish or casserole tin with a little oil and dust it lightly with flour
- Pour half of the batter into the prepared baking dish
- Evenly spread the prepared chicken filling over the layer of batter
- Cover the filling with the remaining batter
- Sprinkle the grated mozzarella over the top of the pie
- Bake in a preheated oven at 180°C for about 30 minutes, or until the top is golden and the pie is set
