Where to find ingredients
Tainha (mullet) can usually be found at larger supermarkets or fish markets. Look for fresh fish with clear eyes and bright red gills. Fresh herbs like parsley, chives, and coriander are readily available in the produce section of most supermarkets. Limes and onions are standard grocery items. Extra virgin olive oil is a pantry staple found in most supermarkets. Salt is also a common household item.
Preparation method
- Butterfly the fish and remove the innards, keeping the scales intact
- Clean the fish thoroughly with water and lime juice
- Season the inside cavity of the fish with salt to taste
- Finely chop the onion, some of the coriander, and some of the fresh herbs
- Mix the chopped seasonings with a pinch of salt, the juice of one lime, and the olive oil
- Stuff the fish cavity with this mixture
- Sew the belly of the fish shut to secure the filling
- Grill the fish, turning it over, until the scales are golden and crispy
- Serve the grilled fish with white rice
