Preparation method
- Completely cover the picanha piece with coarse salt
- Let the salt marinate for 30 to 40 minutes
- Make superficial crosswise cuts on the meat, without going all the way through
- Remove excess salt from the picanha by lightly tapping it
- Cover the entire piece with minced garlic
- Prepare the barbecue grill with medium embers
- Place the picanha on the grill about 60 cm away from the heat, with the fat side facing up
- Roast until it reaches your desired doneness, avoiding overcooking to maintain juiciness
