Crispy Oven-Baked Cassava

Ingredients

1.5 kg cassava (or 1.2 kg if already peeled)
3 tablespoons olive oil
Salt to taste
Freshly cracked black pepper to taste

Where to find ingredients

Cassava: Look for it as 'cassava' or 'yuca' in the produce section of local supermarkets or greengrocers. If fresh is unavailable, you can find it frozen and pre-peeled in the freezer aisle of larger supermarkets or shops that stock Caribbean or international produce. Olive oil, salt, and black pepper: Easily available in the pantry staples aisle of any local supermarket.

Preparation method

  1. Preheat your oven to 220 ºC
  2. Peel the cassava
  3. Cut it into large chunks about 8 cm long
  4. Wash the pieces well under running water
  5. Place the cassava into your pressure cooker
  6. Cover with water, but do not fill more than two-thirds of the pot's capacity
  7. Close the lid and place over high heat
  8. Wait until the pressure cooker starts to whistle or hiss
  9. Lower the heat and let it cook for 5 minutes
  10. The pieces should be tender but still firm enough to slice
  11. Turn off the heat
  12. Let all the pressure release naturally before opening the lid
  13. Drain the water thoroughly in a colander
  14. Allow the pieces to cool slightly so they are easy to handle
  15. Grease a large baking tray with half of the olive oil
  16. Slice the cooked cassava pieces in half lengthwise
  17. Cut each half into wedges or sticks about 2 cm thick
  18. Arrange the wedges on the baking tray without crowding them
  19. Drizzle with the remaining olive oil
  20. Season with salt and pepper to your liking
  21. Bake for about 40 minutes
  22. Turn the wedges halfway through so they brown evenly on all sides
  23. Remove from the oven and serve immediately

Observations

To get that perfect texture, this method uses a quick pressure-cook to soften the cassava before finishing it in the oven. It creates a beautiful golden crust with deep flavour, making it a fantastic side dish or a great snack for sharing.
