Where to find ingredients
You can find fresh corn cobs and husks at local farmers' markets or the produce section of major supermarkets like Coles or Woolworths. Coconut milk and spices are readily available in the international aisle of your local grocer.
Preparation method
- Carefully remove the husks and silk from the corn cobs using a sharp knife.
- Place the corn kernels in a blender with the coconut milk and process until smooth.
- Pass the mixture through a fine-mesh sieve to remove any remaining coarse husks or fibres.
- Season the corn batter with salt, black pepper, and cumin to your preference.
- Set the batter aside.
- Dice the bacon into small pieces and set aside.
- Simmer the chicken breasts on the bone with onion, salt, and water until tender.
- Shred the cooked chicken meat, discarding the bones.
- Sauté the shredded chicken with the bacon, olive oil, tomatoes, and herbs until well-seasoned and fragrant.
- Fold the chicken and bacon mixture into the corn cream until thoroughly incorporated.
- Prepare the corn husks by boiling them in water for a few minutes to ensure they are pliable.
- Assemble the parcels by spooning a portion of the mixture into each husk, shaping them into small packets.
- Secure each parcel tightly with a strip of husk or kitchen twine.
- Boil the pamonhas in a large pot of water for approximately 20 minutes.
- Carefully remove the parcels from the water, allow them to drain well, and serve warm in their husks or sliced into pieces.
