Where to find ingredients
You can find all ingredients at local supermarkets like Woolworths or Coles. For the best result, look for starchy potatoes like Sebago or Desiree in the fresh produce aisle. If you prefer, grated parmesan or pecorino can be used as a substitute for traditional Brazilian queijo ralado.
Preparation method
- Boil the potatoes in water until fork-tender.
- Peel the potatoes and pass them through a potato ricer while they are still hot.
- Gradually add the flour and salt, kneading well until you achieve a smooth, homogeneous dough.
- Place the dough on a floured surface and roll into long ropes.
- Cut each rope into pieces approximately 2cm long.
- In a large stockpot, bring plenty of salted water to a rolling boil.
- Once boiling, add the gnocchi in small batches, waiting for them to rise to the surface.
- Prepare a bowl with cold water and a colander. Remove the cooked gnocchi with a slotted spoon and place them in the colander for a quick cold shock.
- Repeat the process until all the dough is cooked.
- Drain the gnocchi well and set aside in a baking dish.
- Finely dice the onion and sauté in a saucepan with olive oil.
- Add the minced beef and beef stock cubes to the sautéed onion.
- Stir well and, once the meat is browned, pour in the tomato sauce.
- Allow the sauce to simmer for an additional 4 minutes.
- Pour the meat sauce over the prepared gnocchi.
- Sprinkle with grated cheese.
- Place in a preheated oven to brown the top.
- Serve hot.
