style Stir-fry Noodles (Yakissoba)

Ingredients

1 packet of number 8 spaghetti
500g beef strips (your choice of cut)
Salt to taste
1 bunch of Japanese broccoli
1 carrot, sliced into medium rounds
1 capsicum, medium-sliced
1 brown onion, medium-sliced
1 vegetable stock cube
125ml water (for steaming vegetables)
Vegetable oil (optional, for frying the beef)
500ml pre-made yakissoba sauce
5 tablespoons soy sauce (or Worcestershire sauce)
500ml water (for the sauce)
1 tablespoon sunflower oil (for the sauce)
2 tablespoons cornflour
1 beef stock cube
Champignon mushrooms to taste (optional)

Where to find ingredients

You can find all ingredients at local supermarkets or independent grocers. Look for 'number 8' or standard spaghetti in the pasta aisle. Japanese broccoli (often labelled as gai lan or Chinese broccoli) and Asian-style sauces are usually stocked in the international foods section. If specific yakissoba sauce is unavailable, it can be replaced with a blend of soy sauce, oyster sauce, and a touch of brown sugar.

Preparation method

  1. Cook the spaghetti in boiling salted water until al dente. Drain and set aside.
  2. Prepare the vegetables: steam the carrot, capsicum, onion, and Japanese broccoli in a covered pot with 125ml of water and the dissolved vegetable stock cube. Cook until they are tender yet remain crisp.
  3. Season the beef strips with salt.
  4. In a frying pan or wok, heat a little vegetable oil (if using) and sear the beef strips until browned.
  5. Add the browned beef to the pot with the cooked vegetables.
  6. Prepare the sauce: in a separate saucepan, combine the pre-made yakissoba sauce, soy sauce, sunflower oil, and 500ml of water.
  7. Dissolve the cornflour in a little cold water and add it to the sauce pot. Crumble in the beef stock cube.
  8. Bring the mixture to medium heat, stirring constantly until the sauce thickens.
  9. Pour the thickened sauce into the pot with the beef and vegetables. Mix well and let it simmer for a few minutes, stirring occasionally.
  10. If desired, fold in the sliced champignons.
  11. Serve the sauce, beef, and vegetable mixture over the cooked spaghetti.
