Sweet Corn Pamonha

Ingredients

12 ears of fresh corn with husks
1 cup water
2 cups sugar
1 cup finely grated coconut
1 pinch salt

Where to find ingredients

You can find fresh corn with husks at local farmers' markets or produce sections of supermarkets. Grated coconut is available in the baking aisle or the produce section if using fresh coconut.

Preparation

  1. Remove the corn kernels by grating them or cutting them close to the cob
  2. Blend the kernels in a blender along with the water
  3. Add the grated coconut, sugar, and salt to the mixture
  4. Mix everything very well
  5. Prepare small portions of the batter using the corn husks
  6. Fold and tie the husks firmly so the content does not leak
  7. Heat a large pot with water until it reaches a rolling boil
  8. Submerge the pamonhas one by one into the boiling water
  9. Maintain a constant boil to ensure the batter cooks properly without falling apart
  10. Let it cook for approximately 40 minutes
  11. Remove the units from the water using a slotted spoon
  12. Place them in a cool place to firm up before serving
  13. Serve alongside coffee and grated cheese to taste

Notes

This recipe utilizes fresh corn in its entirety, using the husks to shape and cook the batter, ensuring the signature texture and aroma of this traditional delicacy.
