Ingredients
2 cloves garlic, chopped
1 onion, finely chopped
2 tablespoons lard or vegetable oil
5 cups boiling water
800 g charque, cut into small pieces, previously desalted
Green seasoning to taste, such as chopped parsley and spring onions
2 cups rice, washed and drained
1 onion, finely chopped
2 tablespoons lard or vegetable oil
5 cups boiling water
800 g charque, cut into small pieces, previously desalted
Green seasoning to taste, such as chopped parsley and spring onions
2 cups rice, washed and drained
Where to find ingredients
Look for charque in the cured-meat section or at butchery counters; rice, onions, garlic, oil and fresh herbs are available in supermarkets and local markets. If charque is hard to find, a suitable substitute is salted dried beef.
Preparation method
- Soak the charque in water for a few hours, changing the water several times to remove excess salt
- Heat the lard or oil in a large pan over medium heat
- Sauté the onion until translucent and the garlic until golden
- Add the desalted charque and sauté until well browned and fragrant
- Add the rice and stir well, letting it sauté with the meat for a few minutes
- Pour the boiling water over the rice and charque
- Lower the heat, cover the pan and cook until the rice is tender and the water has dried up, about 20 to 25 minutes
- When serving, sprinkle the chopped green seasoning over the top to freshen the dish
