Snook and shrimp stew (Moqueca de badejo com camarão)

Ingredients

1 kilogram of snook in slices
Juice of half a lemon
1 medium onion, sliced
2 green bell peppers, finely diced
3 tomatoes, finely diced
1/2 kilogram of medium shrimp, cleaned
2 shrimp bouillon cubes
200ml coconut milk
2 tablespoons fresh coriander, chopped
1 tablespoon palm oil
Salt to taste

Where to find ingredients

Find fresh snook and shrimp at local fishmongers or large urban markets. Coconut milk, palm oil, and bouillon cubes are available in major supermarkets and specialty grocery stores. If snook is unavailable, substitute with any firm, white-fleshed saltwater fish.

Preparation method

  1. Wash the fish and season it with lemon juice. Set aside.
  2. Dice the onion, bell peppers, and tomatoes into small pieces. Set aside.
  3. Arrange half of the fish slices in a large pot.
  4. Cover the fish with half of the diced vegetables (onion, bell pepper, tomato).
  5. Distribute half of the shrimp over the vegetables.
  6. Sprinkle one crumbled shrimp bouillon cube and half of the chopped coriander over the layers.
  7. Repeat the layers: add the remaining fish slices, the rest of the vegetables, and the remaining shrimp.
  8. Add the second crumbled shrimp bouillon cube.
  9. Pour the coconut milk over the entire mixture.
  10. Sprinkle the remaining chopped coriander on top.
  11. Cook over low heat, with the pot partially covered, for approximately 20 minutes, until the sauce thickens.
  12. If necessary, add about 1/2 cup of water during cooking.
  13. Stir carefully from time to time to avoid breaking the fish and to ensure the bouillon cube dissolves.
  14. Incorporate the palm oil and mix delicately.
  15. Taste and adjust salt if necessary.
  16. Serve the stew hot immediately.
