Preparation
- Cook the white beans in a standard pot until they are soft
- Drain the beans and set aside
- Cook the tripe in water for approximately 40 minutes
- Drain the water from the tripe and set aside
- Fry the bacon in a large pot until golden brown
- Add the onion and garlic to the bacon and sauté until lightly browned
- Add the pork ribs and chicken pieces to the pot
- Brown the meats well
- Pour the chicken stock over the meats
- Cook until the meats are al dente
- Add the cooked beans and the tripe to the pot
- Add the chopped potatoes
- Let everything simmer together until the potatoes are soft and the broth has thickened
- Finish by sprinkling with chopped parsley
- Serve accompanied by white rice and toasted cassava flour
