Brazilian-Style Tripe Stew

Ingredients

500 g tripe
500 g white beans
200 g bacon
500 g fresh pork ribs
500 g chicken thigh and drumstick
1 large onion, chopped
5 cloves garlic, minced
1/2 kg potatoes
1/2 liter chicken stock
Chopped parsley to taste

Preparation

  1. Cook the white beans in a standard pot until they are soft
  2. Drain the beans and set aside
  3. Cook the tripe in water for approximately 40 minutes
  4. Drain the water from the tripe and set aside
  5. Fry the bacon in a large pot until golden brown
  6. Add the onion and garlic to the bacon and sauté until lightly browned
  7. Add the pork ribs and chicken pieces to the pot
  8. Brown the meats well
  9. Pour the chicken stock over the meats
  10. Cook until the meats are al dente
  11. Add the cooked beans and the tripe to the pot
  12. Add the chopped potatoes
  13. Let everything simmer together until the potatoes are soft and the broth has thickened
  14. Finish by sprinkling with chopped parsley
  15. Serve accompanied by white rice and toasted cassava flour
