Sweet Cassava Starch Cookies (Biscoito de Polvilho Doce)

Ingredients

1 kg sweet cassava starch
2 cups sugar
300 g margarine
6 whole eggs
100 g shredded coconut

Where to find ingredients

Sweet cassava starch (polvilho doce) is a staple in Brazilian cuisine and can usually be found in the international foods aisle of well-stocked supermarkets, or more reliably at Latin American or Brazilian specialty grocery stores. It's also available online.
Shredded coconut can be found in the baking aisle of most supermarkets. Look for unsweetened varieties if you prefer to control the sweetness of your cookies, though sweetened is also common and works well.

Preparation method

  1. Place the sweet cassava starch, sugar, margarine, eggs, and shredded coconut in a large bowl
  2. Mix all ingredients and knead with your hands until you get a smooth and homogeneous dough
  3. Grease a baking sheet with a thin layer of fat
  4. Make small balls with portions of the dough
  5. Spread the balls on the baking sheet, leaving a small space between them
  6. Place in a preheated oven at medium temperature
  7. Bake until the cookies have a lightly golden hue

Observations

These cookies are ideal for an afternoon snack. The preparation is simple, yielding a generous amount of cookies with a delicious and distinctive texture.
