Ingredients
1 kg neck pumpkin
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt

Where to find ingredients
Pumpkin, garlic, olive oil and salt can be found in supermarkets, produce markets and general food shops. If neck pumpkin is unavailable, use another sweet orange-fleshed pumpkin as a substitute, keeping neck pumpkin as ideal.
Preparation method
- Peel the pumpkin and cut the flesh into cubes of about 2 cm
- Chop the garlic cloves very finely
- Place a large pan or frying pan over medium heat with the olive oil
- Add the garlic and sauté for 1 minute, just to perfume the oil, taking care not to burn it
- Add the pumpkin cubes and salt to the pan
- Mix the ingredients occasionally for 10 minutes, until the pumpkin begins to soften
- Put the lid on the pan and reduce the heat to the lowest setting
- Leave to cook for 5 minutes so the pumpkin finishes softening in its own steam
- Remove the lid and keep stirring while mashing the pieces with the back of a wooden spoon until it reaches the texture you prefer
- Turn off the heat and serve straight away
