Where to find ingredients
You can find banana-da-terra (plantains) and yellow corn flour at local markets or supermarkets in the produce and international pantry aisles. If you cannot find plantains, semi-firm bananas can serve as a substitute, though they will be sweeter and softer. Butter and vegetable oils are readily available in any local grocery store dairy and pantry sections.
Preparation method
- Trim the ends of the banana-da-terra and peel them.
- Slice each plantain in half lengthwise.
- Slice each half again lengthwise.
- If the strips are too thick, cut them into three parts.
- Cut each piece of plantain into approximately 1 cm cubes.
- Heat a large non-stick skillet over medium heat.
- Add the oil to the skillet.
- Add the diced plantains to the pan and season with a pinch of salt.
- Brown the plantains for about 6 minutes, stirring occasionally, until lightly caramelized. Cooking time may vary depending on the ripeness of the fruit; riper plantains brown faster.
- Reduce the heat.
- Add the butter cubes to the pan and stir until completely melted.
- Season with 1 teaspoon of salt and black pepper to taste.
- Add the corn flour gradually, stirring continuously with a spatula to incorporate well.
- Cook for another 4 minutes, stirring constantly, until the farofa is crispy and golden.
- Turn off the heat and serve the farofa immediately.
