Coarse salt to taste
Minced garlic to taste
Coarse salt to taste
Minced garlic to taste
Where to find ingredients
Picanha is a prime cut of beef from the top sirloin cap. Look for it in the beef section of most supermarkets, butcher shops, and specialty meat markets. Ensure it has a good layer of fat on top, which is crucial for flavor and moisture. Coarse salt is widely available in the spice aisle of any grocery store. Minced garlic can be found in pre-minced jars in the produce section of supermarkets, or you can easily mince fresh garlic cloves yourself using a knife or garlic press.
Preparation method
- Cover the entire piece of picanha with coarse salt
- Let the salt marinate for 30 to 40 minutes
- Make superficial crosswise cuts on the meat, without going all the way through
- Remove the excess salt from the picanha by lightly patting it
- Cover the entire piece with the minced garlic
- Prepare the barbecue grill with medium coals
- Place the picanha on the grill about 60 cm from the heat, with the fat cap facing up
- Roast until it reaches your desired doneness, avoiding overcooking to maintain juiciness
