2 garlic cloves, minced
1 kg lean beef (like topside or sirloin), cut into small cubes
1 bay leaf
Salt to taste
Black pepper to taste
1/2 cup tomato purée
4 cups water
2 beef stock cubes
1/2 cup dry red wine

500 g pearl onions, peeled
Where to find ingredients
For the beef, ask your local butcher for lean cuts like topside or sirloin; these are standard and widely available in Nigerian markets and supermarkets. Pearl onions can be found in the produce section of larger supermarkets or ordered through online grocery platforms specializing in fresh vegetables. Use any good quality dry red wine available at your local bottle shop or supermarket wine aisle—no need for expensive bottles, as the flavour will concentrate during the long cook. Beef stock cubes are staples in every Nigerian kitchen and can be found at any corner shop, open-air market, or supermarket.
Preparation method
- Heat the vegetable oil in a large pot and sauté the chopped onions and garlic until fragrant
- Add the beef cubes to the pot, searing them evenly
- Stir in the bay leaf and black pepper to season
- Continue sautéing everything until the meat is beautifully browned all over
- Pour in the water and crumble in the beef stock cubes
- Stir well until the stock cubes are completely dissolved into the liquid
- Stir in the tomato purée to thicken the base
- Pour in the dry red wine to add depth of flavour
- Add the chopped green bell pepper to the mix
- Give everything a good stir, cover, and let it simmer for 30 minutes
- Add the pearl onions to the pot for the final stretch
- Cook for a further 10 minutes before serving hot
