Preparation method
- Completely cover the picanha with coarse salt
- Let the salt marinate for 30 to 40 minutes
- Make superficial crosswise cuts on the meat, without going all the way through

- Cover the entire piece with crushed garlic
- Prepare the barbecue with medium coals
- Place the picanha on the grill about 60 cm from the heat, with the fat side facing up
- Roast until it reaches your desired doneness, avoiding overcooking to maintain juiciness
