Salted beef (carne seca) is typically found in the international or specialty meat sections of larger supermarkets, or more reliably in Latin American or Brazilian grocery stores. It is a dried, salted cut of beef. If unavailable, you can substitute with a good quality corned beef that has been rinsed very well to reduce saltiness, or by salting your own beef and drying it (a more involved process). Clarified butter (manteiga de garrafa) is a staple in Brazilian cuisine, especially from the Northeast. It can be found in Brazilian or Latin American markets. In supermarkets, look for it in the international foods aisle or ethnic food sections. Preparation method
- Cut the salted beef into pieces approximately 7 cm (3 inches) long

- As soon as the cooker reaches pressure and starts whistling, lower the heat and cook for 30 minutes
- Turn off the heat and wait for all the pressure to release naturally before opening the lid
- Using a slotted spoon, remove the cooked meat from the pot and place it in a serving dish
- While the meat is still hot, shred it using two forks
- Discard any small pieces of fat or cartilage
- If you prefer, shred the meat in a stand mixer on low speed until it reaches the desired texture
- Peel the onions and cut them into half-moons about 1 cm (0.4 inches) thick
- Heat a large skillet over medium heat
- Add the clarified butter to the heated skillet
- Add the sliced onions and season with a pinch of salt
- Sauté the onions for about 5 minutes, until they soften
- Add the shredded salted beef to the skillet with the onions
- Stir and sauté for another 5 minutes
- Taste and adjust salt if necessary
- Serve immediately
