Ingredients
1 cup black-eyed peas
4 cups water for cooking
1 medium red onion
1/2 yellow capsicum
2 medium tomatoes
1/4 cup extra virgin olive oil
2 tbsp white wine vinegar
juice of 1 lemon

salt to taste

Where to find ingredients
Look for black-eyed peas, red onions, yellow capsicum, tomatoes, fresh coriander, olive oil, white wine vinegar, lemons, salt, and black pepper in the fresh produce section, the legumes aisle, and the spices shelf at your local supermarket or greengrocer. A pressure cooker is helpful for the beans.
Preparation method
- Place the black-eyed peas in a pressure cooker
- Add 4 cups of water
- Cover the cooker and bring it to high heat
- When the cooker starts to whistle, reduce the heat
- Cook for 10 minutes
- Dice the red onion into small cubes
- Remove the seeds from the yellow capsicum and cut it into small cubes
- Halve the tomatoes, discard the seeds and dice them into small cubes
- Wash and finely chop the coriander leaves
- In a large bowl, combine the chopped onion, capsicum and tomato
- Turn off the heat after the cooking time and wait for the pressure to release naturally before opening the cooker
- Drain the cooked peas in a sieve
- Rinse the peas under cold water to stop the cooking and drain well
- Add the cooked black-eyed peas to the bowl with the chopped vegetables
- Season with the olive oil, white wine vinegar, lemon juice, salt and black pepper
- Mix all the ingredients gently
- Serve the vinaigrette straight away, garnished with fresh coriander leaves
