For a year-round supply or if fresh is unavailable, frozen or canned corn kernels can be used, though fresh is recommended for the best texture and flavor. All-purpose flour and milk are standard pantry staples found in any grocery store. Egg yolks are available in the dairy section. Grated Parmesan cheese is commonly found in the cheese aisle. Preparation method
- Wash the corn ears well and remove all silk
- Cut the kernels off the ears with the help of a knife and set aside in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the pulp
- Transfer the liquid to a saucepan and place over low heat
- Stir constantly until thickened to prevent lumps from forming
- Transfer the cream to an oven-safe dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with hands lightly greased with flour
- Shape the dough into long cylinders on a surface dusted with flour
- Cut the cylinders into small pieces, in the traditional gnocchi size
- Cook the pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and arrange them in a serving dish
- Cover with your preferred sauce
- Finish by sprinkling grated Parmesan cheese on top
- Place in the oven just long enough to gratinate and brown
