Homemade Traditional Rice Gnocchi

Ingredients

1/2 cup raw rice
1 egg
1 tablespoon chopped parsley
1 tablespoon chopped cilantro
1/2 tablespoon chopped chives
1 1/2 cups all-purpose flour
Salt to taste
Enough water to cook the rice
8 tablespoons vegetable oil (for cooking the dough and boiling with water)

Preparation method

  1. Cook the rice in salted water until very soft
  2. Drain any excess water
  3. In a blender, process the cooked rice with the egg, parsley, cilantro, and chives until you get a homogeneous mixture
  4. Transfer the mixture to a saucepan
  5. Gradually add the wheat flour, mixing
  6. Place the saucepan over low heat, cooking the dough while stirring constantly, until it completely detaches from the bottom of the pan, forming a ball
  7. Season with salt to taste
  8. Remove the dough from the pan and let it cool slightly
  9. On a clean, lightly floured surface, shape the dough into a log about 2 cm in diameter
  10. Cut the gnocchi into pieces of approximately 2 cm
  11. In a large pot, boil plenty of salted water with about 4 tablespoons of oil
  12. Add the gnocchi to the boiling water, a few at a time, to prevent sticking
  13. Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
  14. Drain the cooked gnocchi and, if desired, finish by sautéing them in a pan with the remaining vegetable oil or serve directly with your favorite sauce
