Ingredients
1 tbsp olive oil
1/2 finely chopped onion
1 bay leaf
1 cup rice
1/2 tsp salt
2 cups boiling water
1/2 finely chopped onion
1 bay leaf
1 cup rice
1/2 tsp salt
2 cups boiling water
Where to find ingredients
Buy the rice, onion, bay leaf, salt, and olive oil at the rice aisle, spice section, and fresh produce section of a supermarket or neighbourhood kirana store. Boiling water is prepared at home; use a heavy-bottomed pan for best results.
Preparation method
- Finely chop the onion into very small cubes
- Heat the water until it comes to a boil
- Heat a medium pan over low heat
- Add the olive oil and onion
- Add a pinch of salt
- Sauté the onion for 2 minutes until softened
- Add the bay leaf to the sautéed mixture
- Add the rice and stir for 1 minute so the grains are coated in oil
- Pour the boiling water over the rice
- Season with the remaining salt and mix gently
- Increase the heat to medium
- Do not stir the rice from this point on
- Wait until the water reaches the level of the grains
- Lower the heat and partially cover the pan
- Cook until all the water has been absorbed
- Check the doneness by inserting a fork and separating the grains at the bottom of the pan
- Leave it on the heat for a few more moments if there is still moisture
- Turn off the heat and keep the pan covered for 5 minutes so the steam finishes cooking it
- Gently fluff the grains with a fork before serving
Observations
