Handful of fresh parsley, chopped
1 tablespoon vegetable oil
1 clove garlic, crushed
Salt and black pepper to taste
1 cup heart of palm, chopped
6 tablespoons arborio or carnaroli rice
200g shrimp, peeled, cleaned and fresh or frozen
1/2 cup fresh or frozen green peas
1 teaspoon onion, finely chopped
Where to find ingredients
You can find arborio or carnaroli rice in the gourmet or imported foods aisle of local supermarkets. Fresh shrimp is best sourced from the local fishmonger or the fresh seafood counter at large retail stores. Hearts of palm are typically available in glass jars in the canned vegetables or international pantry section.
Preparation method
- Heat the oil in a heavy-bottomed pan and sauté the onion until translucent.
- Add the garlic and continue to sauté for another 30 seconds until fragrant.
- Toss in the shrimp and cook until they turn pink and firm, about 3 to 4 minutes.
- Remove the shrimp from the pan and set aside.
- In the same pan, add the rice and sauté for 1 minute, stirring constantly to coat the grains.
- Pour in a ladle of hot broth or water and cook, stirring continuously until the liquid is almost absorbed.
- Continue the process, adding the hot liquid bit by bit, until the rice is tender yet al dente and creamy.
- In the final minutes of cooking, fold in the tomato, heart of palm, peas, and the reserved shrimp.
- Mix thoroughly, season with salt and pepper, and finish with freshly chopped parsley.
- Serve immediately while hot, garnishing with extra parsley if desired.
