Creamy Condensed Milk Pudding (Pudim de leite condensado)

Ingredients

3 large eggs
1 tin of condensed milk (397g)
397ml whole milk (use the empty condensed milk tin to measure)
3 tablespoons caster sugar (for the caramel)

Where to find ingredients

You will find all these staples in the baking or international aisles of local supermarkets like SuperValu, Dunnes Stores, or Tesco. For the most authentic result, use full-fat condensed milk. If you cannot find a ring mould, a standard non-stick cake tin works as a substitute.

Preparation method

  1. Preheat your oven to 180°C and let it warm up for at least 10 minutes.
  2. In a blender, combine the eggs, condensed milk, and whole milk, processing for about 3 minutes until the mixture is perfectly smooth and well aerated.
  3. Place the sugar directly into a ring mould or pudding tin, then set over low heat on the hob, stirring occasionally until it melts into a deep golden amber caramel.
  4. Carefully swirl the hot caramel around the base and sides of the mould to coat it evenly.
  5. Pour the blended custard mixture into the caramel-lined mould.
  6. Place in the preheated oven and bake for approximately 40 minutes, or until the pudding is set and the top has turned a light golden colour.
  7. Remove from the oven and allow it to cool completely at room temperature before chilling.
  8. Refrigerate for at least 4 hours, or ideally overnight, to ensure the pudding is firm and the flavours have fully developed.
  9. To serve, run a thin knife around the edges of the mould and invert it carefully onto a serving platter.

Observations

Pudim de leite condensado stands as one of the most cherished desserts in Brazil, celebrated for its minimal ingredient list and unmistakable, indulgent flavour profile.

Its signature velvet-like consistency and perfectly balanced sweetness make it an exemplary choice for rounding off a Sunday roast with family or adding a touch of elegance to any special occasion.

This method is remarkably straightforward and skips the traditional bain-marie, making the process highly accessible for anyone eager to whip up a legendary homemade treat that is sure to impress.
