All-purpose flour, butter, sugar, egg yolks, red wine, and raisins are widely available in the baking or international aisles of most supermarkets. Tart red apples can typically be found in the produce section of supermarkets, or at local farmers' markets. If tart apples are unavailable, a mix of Granny Smith and another apple variety can be substituted.
Preparation method
- Beat the butter with the sugar until a homogeneous cream is obtained
- Add the egg yolk and one tablespoon of red wine to the mixture
- Gradually incorporate the flour
- Work the dough until it is uniform
- Note that the dough will have an oilier, stickier consistency
- Separate the dough into two parts, one equivalent to 2/3 and the other to 1/3 of the total
- Let both portions rest in the refrigerator for 30 minutes

- Steam the mixture until the apples are tender
- Line the bottom and sides of a springform pan with the larger portion of the dough
- Spread the apple filling over the prepared base
- Use the smaller portion of dough to create thin strips
- Arrange these strips over the filling to create a lattice pattern
- Bake in a medium oven until the top of the pie is golden brown
