1 1/2 cups plain flour
3 tablespoons cornflour
1 tablespoon baking powder
200g chocolate, chopped

200g chocolate, chopped
Where to find ingredients
You'll find these staples in any local supermarket or corner shop across Fiji. Eggs, milk, sugar, and margarine are everyday grocery items. For plain flour and baking powder, check the baking supplies aisle. Cornflour is commonly available under the same name in the pantry section. As for the chocolate, just grab any decent quality block from the confectionery aisle—avoid the really sugary candy bars if you want a deeper cocoa flavour; baking-grade chocolate or good dark eating chocolate works best.
Preparation method
- Start by preheating your oven to 180°C
- Toss the eggs, milk, condensed milk, sugar, margarine, plain flour, cornflour, and baking powder into the blender and blitz until you've got a smooth batter
- Get your cake tin ready—around 22cm is perfect—by greasing it lightly with a bit of margarine
- Pour half the batter into the tin and scatter the chopped chocolate evenly over the top
- Cover everything with the rest of the batter
- Pop it in the oven for about 40 minutes, or until it’s beautifully golden and baked through
- Take it out, let it cool down a little, then carefully turn it out to serve
