Where to find ingredients
You can find all ingredients at local Australian supermarkets like Coles or Woolworths. For the onion soup mix, check the stocks and seasonings aisle. The 'Queijo mussarela' is best substituted with standard shredded mozzarella found in the dairy fridge. Fresh coriander is available in the fresh produce section.
Preparation method
- Boil the potatoes until tender, then mash them with the butter until smooth and set aside.
- Heat the olive oil in a large saucepan over medium heat and sauté the diced onion.
- Add the chicken cubes to the pan and brown them thoroughly.
- Stir in the chopped tomatoes, capsicum, green olives, and coriander. Cook for several minutes until the vegetables soften.
- In a separate jug, whisk the onion soup mix into the milk until fully incorporated.
- Pour the milk and onion mixture over the cooked chicken in the pan.
- Simmer, stirring constantly, until the sauce has thickened to your liking.
- Grease a baking dish with a little extra butter to prepare for assembly.
- Spread the creamy chicken mixture evenly across the base of the dish.
- Add an even layer of the cooked rice over the chicken.
- Spread the mashed potatoes carefully over the rice layer.
- Finish by scattering a generous amount of grated mozzarella over the top.
- Bake in a preheated oven at 180°C for approximately 20 minutes, or until the cheese is melted and lightly golden.
