Ingredients
1 kg boneless, skinless chicken thighs
3 cloves garlic, crushed
60 ml white vinegar
3 bay leaves

1 tbsp vegetable oil
2 medium onions, sliced into rings
2 ripe tomatoes, sliced into rings

1/2 tbsp dried red chilli flakes (optional)
500 ml chicken stock
1/2 cup fresh herbs, chopped (flat-leaf parsley and spring onions)

Chicken thighs can be purchased at any local butcher shop or supermarket meat aisle. For fresh herbs, look for bunches of flat-leaf parsley and spring onions in the produce section. Chicken stock is readily available in the pantry aisle, either as liquid cartons or bouillon cubes.
Preparation method
- In a mixing bowl, season the chicken thighs with the crushed garlic, vinegar, bay leaves, and salt. Allow to marinate for at least 1 hour.
- Heat the vegetable oil in a large heavy-based pan or pot over medium-high heat.
- Sear the marinated chicken thighs until browned on all sides.
