Beef tripe can be sourced from a local butcher (pre-cleaned is recommended); cannellini beans are found in the dried pulses aisle; fresh pork and chicken are available in the meat section; fresh produce is found in the vegetable aisle.
Preparation method
- Boil the cannellini beans in a pot until tender
- Drain the beans and set them aside
- Boil the tripe in water for approximately 40 minutes
- Drain the tripe and set it aside
- In a large heavy-bottomed pot, fry the bacon until crispy and golden
- Add the onion and garlic to the bacon and sauté until lightly golden
- Add the spare ribs and chicken pieces to the pot
- Brown the meats thoroughly
- Pour the chicken stock over the meats

- Add the cooked beans and the tripe to the pot
- Add the cubed potatoes
- Simmer everything together until the potatoes are soft and the broth has thickened
- Finish by sprinkling with fresh chopped parsley
