Where to find ingredients
You can find most of these ingredients in the dairy, pantry, and produce aisles of any standard grocery store. For the ham and mozzarella, any deli counter or pre-packaged section will work; if you want an authentic touch, look for 'Queijo Mussarela' or similar mild, high-melt semi-soft cheeses. Coconut milk is found in the international or baking aisle. If you can't find specific Brazilian brands, generic whole milk, full-fat mozzarella, and standard mild deli ham are perfect substitutes. Parmesan can be bought pre-grated or as a block to grate yourself for better flavor.
Preparation method
- In a blender, combine the coconut milk, eggs, milk, oil, flour, cornstarch, baking powder, and a pinch of salt; pulse until you have a smooth, uniform batter
- Set the batter aside
- In a small mixing bowl, toss together the diced onion, chopped olives, tomato sauce, one tablespoon of oregano, and salt to taste
- Set the filling mixture aside
- Grease a rectangular baking dish (approx. 28 cm x 19 cm x 5 cm) with butter and lightly dust with flour, tapping out the excess
- Pour half of the batter into the prepared dish
- Evenly layer the chopped ham, mozzarella, and the tomato sauce mixture over the batter
- Pour the remaining batter over the top, spreading it out to cover the filling completely
- Sprinkle with grated Parmesan and a little extra oregano for a nice finish
- Bake in a preheated oven at 180°C (350°F) for about 45 minutes, or until the top is golden brown and the cake feels firm to the touch
