Ingredients
1 chopped tomato, seeded
Chopped parsley to taste
1 tablespoon vegetable oil
1 crushed garlic clove
Salt and black pepper to taste
1 cup chopped hearts of palm
6 tablespoons Arborio or Carnaroli rice
200 g peeled shrimp, cleaned and fresh or frozen
1/2 cup fresh or frozen peas
1 teaspoon chopped onion

Preparation method
- Heat the oil in a pan and sauté the onion until translucent
- Add the garlic and sauté for another 30 seconds
- Add the shrimp and cook until pink and firm, about 3 to 4 minutes
- Set aside
- In the same pan, add the rice and sauté for 1 minute, stirring constantly
- Add a ladle of hot stock or water and cook, stirring until the liquid almost disappears
- Repeat the process, adding stock little by little, until the rice is al dente and creamy
- In the last few minutes, add the tomato, hearts of palm, peas and the reserved shrimp
- Mix well, adjust the salt and pepper, and finish with chopped parsley
- Serve hot, garnished with more parsley if desired
