Black Beans with Bacon and Cumin

Ingredients

1 cup black beans
6 cups water (divided for soaking and cooking)
1 bay leaf
1/4 cup bacon, diced
1 tablespoon olive oil
1/2 onion, finely chopped
4 cloves garlic, minced
1/4 teaspoon ground cumin
Salt to taste
Freshly ground black pepper to taste

Method

  1. Rinse the beans under cold running water in a sieve
  2. Remove any impurities or damaged beans
  3. Place the beans in a bowl and add 3 cups of water
  4. Discard any beans that float to the top
  5. Cover the bowl with a plate and let soak for 12 hours
  6. Change the soaking water at least once during this time
  7. Drain the beans and discard the soaking water
  8. Place the beans in a pressure cooker with 3 cups of fresh water and the bay leaf
  9. Seal the pressure cooker and place over high heat
  10. Once the cooker reaches full pressure and begins to whistle
  11. Reduce the heat and cook for 15 minutes
  12. Turn off the heat and wait for the pressure to release naturally before opening
  13. Heat a medium saucepan over medium heat
  14. Add the olive oil and the bacon
  15. Sauté for 2 minutes until lightly browned
  16. Add the onion and a pinch of salt
  17. Sauté for about 3 minutes until softened
  18. Add the garlic and the cumin
  19. Sauté for 1 minute until fragrant
  20. Add one ladle of the cooked beans along with some of the cooking liquid to the pan
  21. Mash the beans with a spatula to create a paste that will thicken the sauce
  22. Pour in the remaining cooked beans and liquid
  23. Season with salt and pepper to taste
  24. Cook for 10 minutes or until it reaches your desired consistency
  25. Serve hot
