Ingredients

1 1/2 colher (sopa) de azeite
1/2 cebola
1 cenoura
1 folha de louro
1 1/2 xícara (chá) de arroz
1 colher (chá) de sal
3 xícaras (chá) de água

Method

  1. Wash and peel the carrot
  2. Grate the carrot using the fine side of a grater
  3. Dice the onion into small cubes
  4. Place a little over 3 cups of water in a kettle and bring to a boil over low heat
  5. Heat a medium pot over low heat
  6. Add the olive oil
  7. Add the diced onion and grated carrot
  8. Season with the salt
  9. Sauté the vegetables for 2 minutes until they soften
  10. Add the rice and the bay leaf to the pot
  11. Stir well so that all the rice is coated in the olive oil
  12. Measure exactly 3 cups of the boiling water and pour it over the rice
  13. Stir one last time and increase the heat to medium
  14. Avoid stirring the rice from this point on
  15. Once the water level reduces to the level of the grains
  16. Reduce the heat to the lowest setting
  17. Cover the pot partially
  18. Cook until all the water is absorbed
  19. Check the doneness by inserting a fork all the way to the bottom of the pot
  20. Turn off the heat
  21. Keep the pot covered for another 5 minutes to let the steam finish the cooking process
  22. Fluff the grains gently with a fork
  23. Mix the carrots in delicately
  24. Transfer to a bowl and serve immediately

Notes

This dish is an excellent way to add color and nutrients to your daily staple. The secret to fluffy rice is to toast the grains well before adding the boiling water.
