Ingredients

800 g flank steak
Salt to taste
2 tablespoons oil
1 sprig rosemary
4 cloves garlic, minced
1 onion, chopped
Thyme to taste
1 tablespoon tomato paste
1 can beer

Preparation

  1. Clean the flank steak
  2. Season the meat all over with salt
  3. Heat the oil in a pot
  4. Add the rosemary sprig to infuse the oil
  5. Place the meat in the pot
  6. Sear all sides until they are well browned
  7. Add the garlic, onion, and thyme to the pot
  8. Sauté the vegetables for about 3 minutes
  9. Pour the beer and tomato paste over the meat
  10. Keep on low heat for 30 minutes
  11. Check the liquid level
  12. Add hot water little by little if necessary to keep the meat cooking
  13. Remove the meat from the pot and keep it warm
  14. Strain the remaining sauce in the pot
  15. Bring the sauce to high heat to reduce until it reaches the desired consistency
  16. Slice the meat
  17. Arrange on a serving platter
  18. Drizzle with the reduced sauce before serving
