Grated Parmesan cheese

Grated Parmesan cheese
Where to find ingredients
Look for fresh corn at the greengrocer or produce section, milk in the dairy aisle, wheat flour in the baking aisle, eggs in the chilled dairy section, and Parmesan in the cheese section.
Preparation method
- Wash the corn cobs well and remove all the silk
- Cut the kernels off the cobs with a knife and set aside in a bowl
- Place the corn kernels and milk in a blender
- Blend well
- Add the wheat flour to the blender
- Blend again to combine
- Pass the mixture through a fine sieve to remove the pulp
- Transfer the liquid to a saucepan and cook over low heat
- Stir constantly until it thickens to prevent lumps from forming
- Transfer the cream to an ovenproof dish and let it cool completely
- Mix the egg yolk into the cold dough
- Work the dough with your hands dusted in wheat flour
- Shape the dough into long cylinders on a surface dusted with flour
- Cut the cylinders into small pieces, in the traditional gnocchi size
- Cook the pieces in boiling water until they rise to the surface
- Remove the gnocchi from the water and arrange on a serving platter
- Cover with the sauce of your choice
- Finish by sprinkling the Parmesan cheese over the top
- Bake just long enough to gratin and brown
Observations
This recipe uses fresh corn to create a light, delicious dough. The key is steady cooking to reach the ideal texture before shaping and finishing it in the oven.
